The Recirculation Trap: What QSR Kitchens Lose by Choosing Short-Term Comfort Over Balance

When the kitchen gets too hot, staff often flip the unit into "recirculation" mode, which reuses indoor air instead of pulling in fresh air from outside. It cools things down for a while, but the exhaust hoods keep pulling air out at full strength regardless, so the building ends up pulling in unconditioned outside air through doors and gaps to make up the difference. That wastes energy and strains the equipment.

A field study of 251 restaurant sites across 34 states found 91 percent were running with this kind of imbalance, and nearly half of the dedicated fresh-air units meant to fix it were not even working. The fix the author describes is sizing cooling equipment to match today's actual kitchen heat load, plus using a separate fresh-air system matched to what the exhaust hoods are removing, rather than relying on the main unit switched to recirculation.

There is no direct action here for a homeowner, since this is about commercial kitchen ventilation systems, not household HVAC. But the general lesson translates: a heating and cooling system sized for a building's original setup can fall behind once more equipment or heat sources get added, and shortcuts that fix comfort in the moment can quietly waste energy over time.
